Spinach juice
Description
Spinach juice has an intense green, slightly cloudy color and a fresh, slightly grassy, earthy taste with a delicate sweetness. It is a concentrated source of vitamins A, C, and K, folic acid, iron, potassium, nitrates, and antioxidants with very low calories, so regular, moderate consumption can support eye health, the circulatory system, blood pressure regulation, and bone and blood metabolism. In the kitchen, it works well in smoothies, fresh juices mixed with fruits, dressings, soups, sauces, and pesto, where it softens the taste of vegetables and enriches color. Store the juice in a sealed glass container in the refrigerator for 24–48 hours, or freeze in portions (ice cubes) for several months. People with kidney stones should limit their intake due to oxalates.
