Description
Fresh mango is a juicy, aromatic fruit with smooth, yellow-orange flesh and a thin skin that ranges in color from green to yellow to red; the taste is sweet-tart, tropical with hints of peach and pineapple, and the texture can be creamy or slightly fibrous depending on the variety. From a nutritional standpoint, mango provides a lot of vitamin C and provitamin A (beta-carotene), B vitamins, potassium, fiber, and antioxidants with relatively low fat content; digestive enzymes aid in the breakdown of starch, which promotes digestion, and regular consumption supports immunity, eye health, and the digestive system. In the kitchen, mango works great in smoothies, salads, salsas, chutneys, desserts, and marinades, pairing well with seafood, chili, lime, and yogurt, and is also suitable for grilling or baking. Store unripe fruits at room temperature until softened; to speed up ripening, place them in a paper bag; keep ripe ones in the fridge for a maximum of a few days, and store cut pieces in an airtight container or freeze as puree.
