Dashi is a clear, golden broth with a delicate, pronounced umami flavor: the sea saltiness from kombu (seaweed) and the smoky-fish aroma from katsuobushi (bonito flakes), sometimes enriched with notes of dried mushrooms or sardines. It appears slightly transparent and smells fresh like the sea and smoked fish, which adds depth to dishes without heaviness.
