Description
Fresh mushrooms have a delicate, slightly nutty flavor with a pleasant umami accent; their caps are usually white or cream, smooth and firm, while the stems are compact and elastic. They are a versatile ingredient in home cooking, perfect for frying, stewing, and grilling, and pair wonderfully with meat, pasta, risotto, soups, sauces, pizza, and salads, as well as serving as a base for fillings or vegetarian meat substitutes. Mushrooms are low in calories, provide plant protein, fiber, B vitamins (niacin, riboflavin), potassium, selenium, and unique antioxidants (ergothioneine). They support metabolism, the immune system, and heart health. Store in the refrigerator in a paper bag or breathable container, do not wash before storing, use within 3–5 days; for longer storage, it is best to sauté and freeze them.
