Fatty cheesecake curd
Description
Creamy curd (fatty) has a creamy, thick consistency and a slightly tangy, mildly buttery flavor, with a uniform, light white color, making it perfect for combining with sugar and flavors when baking cheesecakes. Due to its higher fat content, it is creamier than low-fat curd and gives desserts a fuller, richer character. Nutritionally, fatty curd provides a large amount of protein, calcium, and B vitamins, supporting muscle recovery and bone health, although it is also more caloric and contains more saturated fats than low-fat versions. In the kitchen, it is used for cheesecakes, creams, fillings for pancakes and dumplings, sandwich spreads, as well as sweet and savory dips. It should be stored in the refrigerator in its original packaging or an airtight container and consumed within a few days after opening; it can be frozen before thermal processing, keeping in mind the change in texture after thawing.
