Description
Dried porcini mushrooms are an aromatic, intensely umami ingredient with a deep, nutty-earthy flavor and dark brown, wrinkled caps along with firm stems that regain a meaty texture after soaking. Their concentrated aroma enhances broths, risottos, sauces, pasta, and game, and they also work well ground as a spice that adds depth to dishes. Nutritionally, dried porcini provide protein, fiber, B vitamins, and minerals such as potassium, copper, and selenium; they also contain antioxidants and polysaccharides beneficial for immunity. They should be stored tightly in a dry, cool, and dark place, away from moisture; once opened, it's best to keep them in an airtight jar or vacuum-sealed bag, and before use, soak them in warm water and also use the strained liquid as an aromatic broth.
