Vanilla extract
Description
Vanilla extract is a dark brown, clear liquid with an intense, sweet-floral, slightly creamy, and woody aroma with spicy notes; in the version with seeds, small black specks are visible. It is most often a pure extract from vanilla beans in alcohol, with a deep and complex flavor, and a small amount is enough to enhance a dessert or drink. Nutritionally, the extract provides minimal calories and is practically not a source of macro or micronutrients; however, it contains vanillin and other phenolic compounds with antioxidant properties, and its aroma can help reduce added sugar by enhancing the perception of sweetness. It pairs perfectly with baked goods, creams, ice creams, coffee, fruit sauces, and unexpected combinations with meat or vegetables. Store in a tightly sealed, dark bottle, away from light and heat sources; alcohol-based extract retains its aroma for a long time, while non-alcoholic versions should be used more quickly.
