Description

A bold salad combining strong, slightly bitter kale with juicy, red pomegranate seeds and caramelized pumpkin. A dish inspired by Polish autumn — it uses pumpkin and pomegranate, adds crunchy nuts and seeds, and features a honey-mustard dressing. Perfect as a light dinner, an appetizer for a Halloween party (the dark leaves and "bloody" pomegranate arils create a striking contrast), or a side dish for roasted meat. The salad combines sweet, sour, and nutty flavors along with various textures: soft pumpkin, resilient kale, and crunchy toppings. Serve with warm rye bread or roasted duck as a main course.

Preparation steps

Baking pumpkin

1

Preheat the oven to 200°C (top and bottom heat). Peel the pumpkin if you are using a regular variety (you can leave the skin on hokkaido), and cut it into cubes about 2 cm on each side. Place the cubes on a baking sheet lined with parchment paper in a single layer, drizzle with 1 tablespoon of rapeseed oil (15 g) and sprinkle with 1 g of salt. Mix with your fingers on the baking sheet so that each piece is lightly coated with oil. Bake for 25–30 minutes, stirring with a spatula halfway through - the pieces should be soft on the inside and gently caramelized on the edges.

Ingredients: Pumpkin, Rapeseed oil, Salt
Use a baking tray with a higher edge and parchment paper. If the pieces caramelize too much, reduce the temperature to 190°C. The pumpkin is ready when a fork easily goes into the soft center.

Preparing kale

2

Separate the kale leaves from the tough stems: hold the stem in one hand and slide the leaf off with the other hand, or use a knife to remove the thicker rib. Rinse the leaves thoroughly in a large bowl of cold water, drain, and dry in a salad spinner or gently pat dry with a clean towel. Tear the leaves into bite-sized pieces (2–3 cm).

Ingredients: Kale
Use a salad spinner — the kale must be almost dry before seasoning, otherwise the dressing will not distribute well.

Tenderizing kale (massage)

3

Transfer 200 g of kale to a large bowl. Add 15 g of rapeseed oil (1 tablespoon) and 1 g of salt. Massage the leaves with your fingers for 2–3 minutes: grab a handful of leaves and vigorously rub them against each other inside your hands until the leaves become darker, shiny, and softer. This process will remove some bitterness and improve the texture.

Ingredients: Kale, Rapeseed oil, Salt
Massage for 2–3 minutes until shiny and soft; use clean hands or kitchen gloves. Do not skip this step — kale without massage will be tough and fibrous.

Preparing the pomegranate

4

Cut the pomegranate horizontally in half. Holding one half over a bowl of water, hit the bottom of the cut pomegranate with a wooden spoon to release the arils (seeds) into the water — the floating membranes and seeds will separate more easily. Remove the membranes and drain the arils. Check for any white pieces; the arils should be firm and juicy.

Ingredients: Pomegranate
Working over water limits juice splashes. Alternative: cut the pomegranate into quarters and remove the arils by hand.

Sauce (dressing)

5

In a small bowl, pour in 45 g of rapeseed oil (3 tablespoons), add 30 g of honey and 15 g of mustard (1 tablespoon). Add 30 ml of apple cider vinegar, 3 g of salt, and 1 g of freshly ground pepper. Whisk vigorously with a whisk or fork for about 30 seconds until you achieve a smooth, emulsified dressing — it should be slightly thick and shiny. If you want a vegan version, replace the honey with 30 g of maple syrup or agave.

Ingredients: Rapeseed oil, Honey, Mustard, Apple cider vinegar, Salt, Black pepper
Use a small bowl and a whisk or a jar with a lid (you can shake it). The dressing is ready when the oil and vinegar form a uniform emulsion and lightly coat the spoon.

Roasting nuts and seeds

6

Heat a dry pan over medium heat. Add 80 g of walnuts broken into smaller pieces and, if using, 30 g of pumpkin seeds. Toast for 3–5 minutes, stirring frequently with a wooden spoon, until you smell a nutty aroma and see slightly darkened edges. Be careful not to burn them — toasting may take less time depending on the temperature.

Ingredients: pumpkin seed
Use a wide skillet and control the temperature — burnt nuts become bitter. After removing from heat, transfer to a plate to cool.

Assembling the salad

7

Once the pumpkin is roasted and slightly cooled (about 5 minutes), place it in a large bowl with the massaged kale. Add 200 g of pomegranate arils and 80 g of toasted walnuts. Drizzle with the prepared dressing in batches: first, add 2/3 of the dressing, gently mixing with large movements using a spatula or two spoons for 20–30 seconds to evenly distribute the sauce without mashing the pumpkin. Taste and season with an additional 1–2 g of salt or pepper if needed.

Ingredients: Pumpkin, Kale, Pomegranate, Apple cider vinegar, Rapeseed oil, Honey, Mustard
Use a large, wide bowl — it's easier to mix evenly. Stir gently so as not to break the pumpkin pieces and not to squeeze the juices from the pomegranate.

Finishing and Decoration

8

Transfer the salad to a plate or serving platter. Sprinkle the top with the remaining pomegranate arils for a pop of color and toasted pumpkin seeds. If you are using goat cheese (optional), crumble it evenly on top (100 g). For Halloween, you can arrange the leaves in a wreath shape and scatter the arils like "drops of blood" for a theatrical effect.

Ingredients: Pomegranate, pumpkin seed, Ser kozi
For serving, use a flat, dark plate or a wooden board — the contrast will highlight the color of the pomegranate and kale. Additionally, you can add a few slices of roasted pumpkin around the edge of the plate.

Serving

9

Serve immediately when the dressing is fresh and the pumpkin is still slightly warm — this brings out the flavors. The salad pairs well with warm rye bread or as a contrast to roasted meat (e.g., duck).

If you are preparing a salad for a party, assemble it just before serving so that the pomegranate remains firm and doesn't release its juice.

Fun Fact

💡

Pomegranate was considered in ancient times as a symbol of life and fertility; in the kitchen, it also serves as a natural dye and a source of anthocyanins. The combination of kale and pomegranate is a modern interpretation of autumn flavor that brings together local Polish vegetables with a fruit of Mediterranean origin.

Tips

🍽️ Serving

Serve on a dark plate to highlight the color contrast. For guests, prepare a version without goat cheese (vegan) and a version with cheese. You can add thin slices of roasted duck for the meat version.

🥡 Storage

Store the roasted pumpkin and dressing separately in an airtight container in the refrigerator for up to 2 days. Combine the salad just before serving — the pomegranate will release juice and the kale will change texture. Reheat the pumpkin in the oven for 5–7 minutes at 180°C before adding it to the salad if it has been stored.
