It is based on mild green tea leaves, which, when brewed, produce a light green, slightly grassy infusion; the juice and slice of lemon add a pleasant acidity and freshness. The drink is light, aromatic, and pairs wonderfully with light yeast pastries, cheesecake, or a sandwich with cottage cheese. Preparation takes just a few minutes, and the result is an elegant, clear infusion with a balanced flavor – not bitter, as long as you follow the brewing temperature and time.

Preparation steps

Preparing the water

Pour 1000 ml of fresh water into an electric kettle or pot. Bring the water to a boil. If you are using a stovetop kettle, place it over medium heat and bring it to a boil.

Use an electric kettle or a small pot with a capacity of at least 1.2 l. Do not leave unattended at the stove. If you have an external kettle, heat the water in it faster.

Cooling the water

Remove the boiled water from heat and let it sit for about 2 minutes to cool down to around 75–85°C. If you have a kitchen thermometer, set the temperature to 80°C. Without a thermometer — wait 2 minutes after boiling for the steam to settle and the bubbles to stop vigorously pulsating.

Use a kitchen thermometer if you have one; if not, 2 minutes after boiling usually gives around 80°C. Water that is too hot (100°C) can make green tea bitter.

Preparing the dish and tea

Prepare a teapot or kettle and cups. Pour a little hot water (a few tablespoons) into the teapot, swirl it around to warm the walls of the vessel, and then pour out this water. Add 8 g of loose green tea to the infuser or place 4 tea bags into the teapot.

Use a teaspoon to measure the leaves or 4 tea bags. Heating the vessel helps maintain the temperature during brewing. For the infusion, it's better to use a stainless steel strainer or a porcelain infuser.

Brewing

Pour the cooled water at ~80°C directly over the tea leaves, ensuring they are completely covered. Steep for 2–3 minutes: 2 minutes for a delicate, light green infusion, 3 minutes for a fuller flavor. Do not steep longer than 3 minutes, as the tea may become bitter.

Set a timer for 2 or 3 minutes. If after immersing the leaves you notice a very intense "grass" smell and a dark color, shorten the brewing time next time. Use a kitchen timer or your phone.

Adding lemon

In the meantime, cut the lemon in half. Squeeze the juice from one half of the lemon into a small bowl (about 30–50 g of juice) and slice a few thin rounds from the other half for decoration. After the steeping time, remove the tea bags or strain the infusion through a sieve and add the squeezed lemon juice to the teapot.

Use a sharp knife and a cutting board. Be careful with the seeds — catch them while squeezing, preferably through a strainer. For a milder flavor, add the juice gradually and taste.

Sweetening and seasoning (optional)

If you want a sweeter drink, add honey: about 40 g to the whole pitcher or portion it out with 1 teaspoon (about 7–10 g) per cup. If you are using mint, tear off a few leaves and gently crush them between your fingers to release the aroma, and add them to the pitcher or directly to the cups.

Add honey to the warm (not boiling) infusion — it will dissolve better. Additionally, you can add mint for freshness. Honey is optional; you can alternatively use sugar.

Serving

Pour the tea through a strainer into cups or glasses. Add a slice of lemon to each serving and optionally some mint leaves. Serve immediately while the brew is still warm and aromatic.

It is best to use transparent glasses or porcelain cups to see the light green color of the infusion. Use a teapot with a comfortable spout for brewing and pouring.

Organization and storage

After finishing pouring, discard the used leaves or tea bags, wash the jug and strainer. If there is some brew left, transfer it to a sealed container and chill in the refrigerator for up to 24 hours — it can be used as iced tea but loses its fresh aroma.
