Description
Lemon (Citrus limon) has an intense, sour, refreshing taste and a smooth, bright yellow, oval-shaped skin. The flesh is juicy, divided into segments, often with a few seeds; the skin (often referred to as zest) provides a concentrated aroma when grated. It is rich in vitamin C, antioxidants, and flavonoids, while being low in calories. Regular consumption supports immunity, improves iron absorption, aids digestion due to organic acids, and may contribute to reducing the risk of kidney stones by increasing urine acidity. In the kitchen, juice and zest are used for dressings, marinades, desserts, beverages, and dishes with fish and poultry, where it balances and enhances flavors. Whole lemons can be stored at room temperature for a few days or in the refrigerator for up to a few weeks; cut lemons should be tightly wrapped in plastic or stored in a container, and juice and grated zest can also be frozen.
