Beef tenderloin (filet mignon)

Description

A piece of the highest quality tenderloin, bright red in color, slightly marbled. Choose fresh meat with a smooth surface, free from unpleasant odors. For even cooking, ask the butcher for uniform thickness of the pieces (about 4-5 cm).
