Description
Dried pineapple is a sweet, intensely flavored fruit with a golden-yellow, slightly glossy texture and an elastic, sometimes slightly chewy consistency. The drying process concentrates the natural sugars and aromas, giving the product a distinctly tropical, caramelized flavor profile and a darker color. Nutritionally, dried pineapple provides fiber, quickly digestible carbohydrates, and minerals, especially manganese, as well as antioxidants; the content of vitamin C and the activity of the enzyme bromelain are partially reduced due to drying, but the product still supports energy supply and aids digestion. Dried pineapple is great as a snack, an ingredient in muesli and trail mixes, an addition to baked goods, salads, or sauces and chutneys, as well as in desserts and drinks. Store it in an airtight container in a cool, dry place, avoiding moisture; for longer storage, it is advisable to keep it in the refrigerator or freeze it.
