Oysters
Description
Oysters are meaty, delicate seafood with a subtle, slightly briny and mineral flavor, and a creamy, moist texture; in their shell, they have an irregular, rough outer shell and a smooth, pearly interior. They are most often served raw on the half shell with lemon, vinegar mignonette sauce, or champagne, but they also work wonderfully grilled, baked (e.g., Rockefeller), in risottos, soups, or pasta, where they enhance dishes with an intense marine aroma. They are low in calories, rich in high-quality protein, iron, zinc, vitamin B12, selenium, and omega-3 fatty acids, which support immunity, blood-forming functions, and cardiovascular health. They should be stored cool (0–4°C), preferably on ice in a breathable container with the shells facing up; live oysters should be closed and consumed within 1–2 days, while open or unfresh ones should be discarded.
