Bresaola

Description

Bresaola is an Italian dried beef from Valtellina, sliced into very thin pieces with a dark pink, almost burgundy color and a delicate, silky texture. The flavor is subtle, slightly sweet with a noticeable saltiness and aromatic spices, more delicate than traditional dried pork meats. Nutritionally, bresaola is a rich source of high-quality protein with relatively low fat and carbohydrate content, providing iron and B vitamins, which support muscle recovery and energy metabolism; however, one should be cautious of the sodium content typical of cured meats. In gastronomy, slices of bresaola work well as antipasti, an addition to salads with arugula and parmesan, a sandwich ingredient, carpaccio, as well as pairing with melon or asparagus. Store in the refrigerator tightly wrapped or vacuum-sealed, consume an opened portion within a few days; a whole, uncut piece can be chilled longer, avoid freezing as it alters the texture.
