Description

Rhubarb is cut into firm, meaty stalks that range in color from green to pink to deep red; the taste is distinctly sour, tart, and refreshing, and the chopped pieces soften quickly and release their aroma during cooking. It is low in calories, rich in fiber, vitamins K and C, and minerals such as calcium, while the anthocyanins and organic acids it contains support digestion and have antioxidant properties; however, it is important to remember that the leaves are toxic, and rhubarb contains oxalates, which can be problematic for those prone to kidney stones. In the kitchen, chopped rhubarb works wonderfully in compotes, jams, tarts, crumbles, and sauces, pairing well with sweeter fruits like strawberries and spices such as vanilla and ginger, as well as in savory dishes with meat. Store it in an airtight container or wrapped in a damp towel in the refrigerator for 2–3 days, or freeze it on a tray and then in vacuum bags for up to a year.
