Description
Beets are a root vegetable with an intense, sweet-earthy flavor and a characteristic deep burgundy-magenta color; their fleshy, round bulb hides a juicy interior, while the fresh leaves add freshness and color. Nutritional values include low calories, high fiber, folic acid, vitamin C, potassium, and nitrates, as well as betalains — powerful antioxidants. Regular consumption may support the circulatory system and lower blood pressure, improve physical performance, aid digestion, and have anti-inflammatory effects. In the kitchen, beets are versatile: roasted, boiled, stewed, pickled, or raw in salads, soups (borscht), juices, and creams; they pair well with goat cheese, nuts, balsamic vinegar, and citrus fruits. Store unwashed bulbs in a cool, humid place or in the refrigerator in a perforated bag after removing the leaves; roots stay fresh for about 1–2 weeks, cooked for 3–5 days, and excess can be frozen or preserved.
