Description
Chili pepper, from milder jalapeños to fiery habaneros, is characterized by an intense, spicy flavor with fruity or smoky notes; it usually has an elongated shape, shiny skin, and colors ranging from green to red to orange. It contains few calories but is high in vitamin C and carotenoids, as well as capsaicin — the compound responsible for the sensation of heat, which has anti-inflammatory properties, supports metabolism, and may aid the circulatory system. In the kitchen, chili peppers are versatile: they add spiciness to salsas, marinades, sauces, curries, grilled dishes, fillings, and essentially any dish that requires a "fiery" touch; seeds and membranes can be removed to reduce heat, and cream or yogurt can temper the effect. Store them in the refrigerator in an airtight container or perforated bag for 1–2 weeks, and longer if frozen, pickled, or dried. When cutting, it's advisable to wear gloves and avoid touching your eyes.
