Spring onion
Description
Green onion, also known as young onion or scallion, has a delicate, slightly oniony flavor with a subtle sweetness and a crunchy, light green stem along with a thin white part at the base. It resembles long, slender shoots with a white bulb; it adds freshness and color to dishes. It is low in calories, contains vitamin C, folates, small amounts of vitamins A and K, fiber, and antioxidants such as quercetin and sulfur compounds, which support immunity, have anti-inflammatory effects, and benefit the cardiovascular system. In the kitchen, it works well raw as an addition to salads, sandwiches, and dips, as well as sautéed or stewed in soups, stir-fries, scrambled eggs, and Asian dishes, where it enhances flavor without overpowering. Store green onions in the refrigerator in a perforated bag or standing in a jar with a small amount of water, and use within 7–10 days; they can also be chopped and frozen for cooked dishes.
