Kala namak salt (black salt)
Description
Kala namak salt, known as black salt, has a distinctive sulfurous aroma reminiscent of boiled eggs and a salty-mineral, slightly metallic taste. It resembles dark, brownish-gray crystals with a pink interior when ground, and it adds a subtle, exotic touch to dishes without the intense sharpness of regular table salt. In terms of composition, it is primarily sodium chloride with traces of sulfur compounds and trace minerals, which gives it low caloric value but high sodium content; it has traditionally been used as a digestive aid. It pairs perfectly with Indian cuisine, fruit salads, chutneys, tofu dishes, or vegan egg substitutes, as well as raitas and chaat snacks. Store it in an airtight container in a cool, dry place, away from moisture and strong odors, and use it sparingly on a low-sodium diet.
