Spanish chorizo
Description
Spanish chorizo is a pork sausage with an intense, smoky aroma and a deep red color, imparted by pimentón (smoked paprika) and garlic. It can be cured and firm, easy to slice, or fresh and soft, requiring cooking; it comes in sweet (dulce) and spicy (picante) versions. It is calorie-dense and fatty, but also rich in protein, vitamin B12, iron, and zinc, which support blood production and metabolic functions; at the same time, it should be consumed in moderation due to its saturated fat and salt content. Chorizo pairs wonderfully with tapas, paella, stews, juicy beans, and scrambled eggs, adding deep flavor to dishes. For storage, it is best to keep cured sausage in a cool, dry place or in the refrigerator at a temperature below 4°C; after unpacking, wrap it in food paper and use it within a few days, while fresh chorizo should be stored for a short time or frozen for longer preservation.
