Description
Freshly grated horseradish has a creamy, moist texture and a bright white color with a greenish tint from the leaves, and its flavor is sharp, pungent, and quickly fleeting — it delivers an intense, tear-inducing burst of aroma typical of cruciferous roots. Nutritionally, horseradish is low in calories, a source of vitamin C, fiber, and phytochemicals such as glucosinolates, which have antibacterial and anti-inflammatory properties and support digestion and circulation.
