Description

Muscovado sugar is unrefined cane sugar with a moist, grainy texture and a deep, dark brown color; the flavor is intensely molasses-like with notes of caramel, toffee, and a slightly bitter finish, which adds depth and aroma to dishes. Nutritionally, muscovado consists mainly of sucrose and provides a similar number of calories as other sugars, but contains trace amounts of minerals (iron, calcium, magnesium, potassium) and remnants of molasses. Due to its lack of refinement, it offers marginal benefits over white sugar, but its stronger flavor allows for more economical use. It is typically used in baking (cakes, cookies, gingerbread), sauces, marinades, glazes, coffee, cocktails, and caramel desserts, where it enhances flavors. Store tightly in a dry, cool place, in an airtight container; if it hardens, you can add a piece of apple, bread, or a special "moist ball" for sugar.
