Palm sugar (gula melaka) is a traditional sweetener made from the sap of coconut or sugar palm flowers, available in the form of blocks, paste, or granules with a dark brown, sometimes slightly reddish color and a rich, caramel-toffee aroma with a hint of smokiness.
