Description

Palm sugar (gula melaka) is a traditional sweetener made from the sap of coconut or sugar palm flowers, available in the form of blocks, paste, or granules with a dark brown, sometimes slightly reddish color and a rich, caramel-toffee aroma with a hint of smokiness. Compared to refined sugar, it contains trace amounts of minerals such as iron, potassium, calcium, and zinc, as well as polyphenolic compounds; it may have a slightly lower glycemic index, but it is still a source of simple sugars, so it should be used in moderation. In Asian cuisine, gula melaka perfectly balances flavors in desserts, sauces, marinades, curries, and beverages, pairing wonderfully with coconut milk, lime, or chili; it also works well in baking and as an addition to dressings. It should be stored in an airtight container in a cool, dry place, away from moisture; if it hardens, it can be softened by heating or briefly steaming.
