Description
Powdered sugar (for cream) is very finely ground sugar with a silky, snow-white consistency and a pure, intensely sweet flavor that dissolves quickly in the mouth and in mixtures. Due to its fine grind, it gives creams, icings, and sprinkles a smooth, velvety texture without graininess, and it often contains an anti-caking agent (e.g., starch), which makes pastry work easier. Nutritionally, it is a source of simple carbohydrates that provide quick energy, but it does not contain significant vitamins or minerals, so it is best to use it in moderation. It is typically used for butter creams, whipped cream, icings, sprinkles, and cake decorations, as well as for pastry mixtures that require smoothness. It should be stored tightly closed in a dry, cool place, away from moisture; if it clumps, simply sift before use.
