Breadcrumbs
Description
Breadcrumbs are finely ground, slightly crunchy crumbs of bread with a neutral, subtly sweet flavor and a light brown or creamy color depending on the type of bread used. They have a compact yet loose structure that absorbs moisture and spices well. Nutritionally, they are dominated by carbohydrates and fiber (especially whole grain versions), contain a moderate amount of protein, and very little fat; in enriched or whole grain form, they provide valuable minerals and help promote a feeling of fullness. In the kitchen, breadcrumbs are useful as a coating for meats, fish, and vegetables, an ingredient in meatballs and patties, a component of fillings, as well as a topping for casseroles and gratins, and also as a thickener for sauces or excess moist dough. They should be stored in an airtight container in a dry, cool place; for longer storage, it is advisable to keep them in the refrigerator or freezer to maintain freshness and avoid mold.
