Dark chocolate 70% cocoa
Description
Dark chocolate 70% cocoa has an intense, slightly bitter taste with distinct cocoa notes and subtle fruitiness, featuring a smooth, glossy texture and a crisp snap. The cocoa content of about 70% means lower sugar and higher cocoa fat and antioxidant levels; it provides calories, magnesium, iron, and polyphenols that support the circulatory system and have anti-inflammatory effects, although it should be consumed in moderation due to its energy density. In the kitchen, it works well in cakes and ganache, as well as in sauces, glazes, ice cream desserts, or as an addition to savory dishes (e.g., in mole sauce). It should be stored tightly sealed, in a dry and cool place (ideally 15–18°C), away from strong odors and light; in a humid climate, it can be refrigerated, but before serving, it should be brought back to room temperature to avoid condensation.
