Lemon juice
Description
Lemon juice has an intense, fresh, sour taste with a distinct citrus note and a transparent yellow color; it adds brightness to dishes and enhances flavors without overpowering. It is low in calories, rich in vitamin C, contains citric acid and antioxidants, which support immunity, aid in iron absorption, and help with digestion, and may also reduce the risk of kidney stones with moderate consumption. In the kitchen, lemon juice is suitable for dressings, marinades, sauces, beverages, desserts, and dishes with fish or vegetables as a flavor balancing agent. Store fresh juice in a sealed, dark container in the refrigerator for 2–3 days, and for longer storage, freeze in ice cube trays; bottled juice has a longer shelf life but may contain preservatives.
