Clarified butter or regular butter (82%) is characterized by a rich, buttery flavor and a golden color; clarified butter has a cleaner, slightly nutty aroma and a transparent, golden consistency without protein foam, while regular butter has a creamy texture and a uniform, light yellow color. Both are calorie-dense sources of fat (about 700–750 kcal/100 g) and provide fat-soluble vitamins A, D, E, and K as well as fatty acids; clarified butter contains less lactose and milk proteins, which makes it easier to tolerate for some people, but due to the high content of saturated fats, it should be consumed in moderation. In the kitchen, they are excellent for frying at higher temperatures (clarified butter has a higher smoke point), baking, seasoning sauces, finishing dishes, and as an addition to vegetables, fish, or bread. Regular butter is best stored in the refrigerator tightly wrapped, while clarified butter can be stored longer at room temperature in a sealed jar or in the refrigerator to extend freshness; both freeze well.
