Almond extract
Description
Almond extract is a concentrated liquid flavoring with an intense, sweet-bitter, marzipan aroma and a color ranging from light yellow to dark brown, depending on the manufacturer and extraction method used. The flavor is very concentrated, so it is used in small amounts to enhance nutty and vanilla notes without adding texture. Nutritionally, the extract provides trace amounts of calories and micronutrients, as it is used in drops; it is primarily a source of aromatic compounds rather than nutritional value. Natural extracts may contain compounds with antioxidant properties, but individuals with nut allergies should avoid it. In the kitchen, it pairs well with cakes, cookies, creams, ice creams, cold desserts, glazes, as well as drinks and marinades, where it enhances almond and sweet notes. It should be stored tightly closed in a cool, dark place, away from heat and light sources; an opened bottle is best used within 1–2 years, checking the expiration date.
