Description
Mung bean (green) is small, round seeds with a vibrant green skin and a light yellow interior when split; its flavor is mildly nutty and slightly sweet, and it gains a creamy yet firm texture when cooked. It is also popular as sprouts, which are crunchy and fresh. Nutritionally, mung beans are rich in plant protein, fiber, folic acid, magnesium, potassium, and B vitamins, while being low in fat. They contain antioxidants and compounds that support digestion and regulate blood sugar and cholesterol levels, making them a valuable dietary component for heart health and metabolism. In the kitchen, they work well in soups, curries, dals, salads, stir-fries, desserts, and in crushed form (moong dal) or as sprouts; flour and starch can also be used to make dumplings and pasta. Store dry beans in an airtight container in a cool, dry, and dark place for up to a year, cool cooked dishes and consume within 3–4 days or freeze for up to 3 months.
