Salted herring fillets (matjas)
Description
Salted herring fillets (matjas) are young, delicate slices of herring with a velvety, slightly creamy texture and a mild, moderately salty flavor with a subtle hint of fish sweetness; the flesh is light pink to beige in color and has a smooth surface, often sold in oil, vinegar, or mild brine. They are a valuable source of high-quality protein, polyunsaturated omega-3 fatty acids (EPA, DHA), vitamins D and B12, and selenium, with low saturated fat content, which supports cardiovascular health, brain function, and has anti-inflammatory effects. Matjas fillets are great for sandwiches, potato salads, cold appetizers, tartines, and dishes with onions or cream; they pair perfectly with potatoes, eggs, and sour accompaniments. Store in the refrigerator in an airtight container at 0–4°C, preferably in the original brine or covered with oil; consume within a few days after opening, can be frozen for 2–3 months, although the texture may change slightly.
