Description
Bitter chocolate 50–60% is characterized by a distinct yet balanced cocoa flavor with a slight bitterness and moderate sweetness; it has a glossy, dark brown bar and a dense texture, melting easily and releasing an intense aroma. It contains a significant amount of cocoa solids, flavonoids, and antioxidants, as well as minerals such as magnesium, iron, and copper, which in moderate amounts can support heart health, improve mood, and have an anti-inflammatory effect, while having a moderate sugar and calorie content compared to milk chocolate. In the kitchen, it works perfectly for baking brownies, cakes, and cookies, preparing ganache, glazes, and creams, as well as for melting in sweet-bitter sauces or pairing with fruits, nuts, and cheeses. Store in a cool, dry, and dark place (ideally 15–20°C), tightly wrapped, away from strong odors; avoid sudden temperature and humidity changes, and if cooled, allow it to return to room temperature before opening.
