Stale wheat rolls (kaisers)
Description
Stale bread rolls (kaiser rolls) have a hard, dry crust and a dense, less elastic crumb with a mild, slightly sweet flavor typical of white flour; they resemble darkened, compact-shaped rolls that have lost their freshness. Nutritionally, they are a source of easily digestible carbohydrates that provide energy, contain small amounts of protein and fat, and, in the case of enriched flour, B vitamins and iron, but they are low in fiber, so it is advisable to consume them in moderation as part of a more balanced diet. Stale kaiser rolls are perfect for making breadcrumbs, croutons, stuffing, bread puddings, French toast, or panzanella salads, as well as for thickening soups and sauces. It is best to store them dry in a paper bag or linen cloth for the short term, and for longer storage, freeze them; to refresh, simply sprinkle with water and heat in the oven for a few minutes.
