Cauliflower
Description
Cauliflower is a white, dense head with small florets attached to short stems; its flavor is delicate, slightly nutty and sweet, with a subtle hint of cabbage aromas. It is low in calories and rich in fiber, vitamin C, vitamin K, folic acid, potassium, as well as sulfur-containing compounds and antioxidants that support digestion, immunity, anti-inflammatory balance, and heart health, and also help maintain body weight. In the kitchen, cauliflower works well roasted, steamed, as a puree, "cauliflower rice," a base for soups, casseroles, or vegan "crusts." To prolong freshness, store it in the refrigerator in a perforated bag or container, unwashed until use; it is best consumed within 5–10 days. For longer storage, it can be blanched and frozen.
