Chinese cabbage
Description
Napa cabbage is a long, compact head with light green, delicate leaves and broad, white veins; it has a crunchy, juicy texture and a mild, slightly sweet flavor without intense bitterness. It is low in calories and rich in water, fiber, and vitamins C, K, and folic acid, as well as containing minerals such as potassium. Regular consumption supports digestion, hydration, and immunity, and thanks to vitamin K, it contributes to bone health. In the kitchen, napa cabbage works well in salads, coleslaws, kimchi, stir-fries, soups, fillings for dumplings, and as a healthy base for wraps; it pairs well with soy sauce, sesame, ginger, garlic, chili, and with meat and tofu. Store it unwashed in the refrigerator, preferably in a perforated bag or wrapped in a paper towel in the vegetable drawer, using it within about one to two weeks; cutting shortens its shelf life, and freezing destroys its texture.
