White cabbage
Description
White cabbage is a dense, round head with compact, creamy-green leaves and a crunchy texture; it has a mildly sweet flavor with a slight, fresh spiciness when raw, which softens and becomes sweeter during cooking or fermentation. It pairs well with both traditional and modern dishes: it is suitable for salads, fermentation, soups, braised sides, stuffed cabbage, and as a base for salads and stir-fries. Nutritionally, cabbage is low in calories, rich in fiber, vitamins C and K, folic acid, and antioxidants that support digestion and overall immune health. To maintain freshness, store unwashed heads in the refrigerator in the vegetable drawer or in perforated plastic, ideally at a temperature of around 0–4°C; a whole head can last several weeks, while a cut one will last 3–5 days. Avoid storing near ethylene-producing fruits.
