Napa cabbage
Description
Napa cabbage (Chinese cabbage) has a long, elongated head with light green, soft leaves and distinct white veins; its flavor is mild, slightly sweet, and very crunchy when raw, becoming soft and gentle after cooking. It is low in calories, rich in water and fiber, and contains valuable vitamins, especially C, K, and folates, as well as minerals such as potassium and calcium, and antioxidants, which support digestion, hydration, the immune system, and bone health, and have anti-inflammatory effects. In the kitchen, napa cabbage is great for kimchi and pickling, salads, coleslaws, stir-fries, soups, fillings for dumplings, and braised dishes, where it adds a delicate texture and mild flavor. It should be stored unwashed, loosely wrapped in parchment paper or perforated plastic wrap in the refrigerator drawer; a whole head will last 1–2 weeks, and once cut, it is best to use the leaves within a few days.
