Description
Kecap manis is an Indonesian sweet soy sauce with a thick, syrupy consistency and a deep, dark brown color. The flavor combines the intense umami of soy sauce with the distinct sweetness of palm sugar or molasses, with notes of caramel and a slight spicy depth. Nutritionally, kecap manis primarily provides calories from sugars and contains sodium typical of soy sauces; it offers small amounts of protein and minerals from soy, and the natural ingredients may have antioxidant properties. For this reason, it is best used sparingly as a flavorful addition rather than a primary source of sweetness. In the kitchen, it pairs well with grilled dishes, marinades, stir-fries, glazes for meat, vegetables, and tofu, as well as being an ingredient in dips and Indonesian dishes. Store in a tightly sealed bottle in a cool, dark place; once opened, it is best kept in the refrigerator, where it will maintain its quality for several months.
