Kecap manis is an Indonesian sweet soy sauce with a thick, syrupy consistency and a deep, dark brown color. The flavor combines the intense umami of soy sauce with the distinct sweetness of palm sugar or molasses, with notes of caramel and a slight spicy depth. Nutritionally, kecap manis primarily provides calories from sugars and contains sodium typical of soy sauces; it offers small amounts of protein and minerals from soy, and the natural ingredients may have antioxidant properties. For this reason, it is best used sparingly as a flavorful addition rather than a primary source of sweetness.
