Celery root
Description
Celery root is a bulbous, unassuming vegetable root with a creamy-white, slightly rough skin and a flesh that has an intense, slightly spicy, and nutty-earthy flavor with a delicate hint of celery. It has a firm texture that becomes soft and aromatic when cooked, while retaining its crunchiness when raw. It is low in calories, rich in fiber, vitamin K, vitamin C, potassium, and phytochemical compounds with anti-inflammatory and antioxidant properties, which support digestion, blood pressure balance, and bone health. In the kitchen, celery root works wonderfully in soups, purees, casseroles, salads, and stews, pairing excellently with potatoes, carrots, apples, dill, garlic, and meat. Store it in a cool, damp place or in the refrigerator wrapped in a paper towel inside a plastic bag, which will extend its freshness for up to several weeks.
