Description
Fresh goat cheese has a creamy, white-porous texture, ranging from slightly crumbly to smooth and spreadable, with a distinctly tangy, slightly earthy flavor characteristic of goat's milk. As a fresh product, it provides protein, calcium, and B vitamins, as well as medium-chain fatty acids, which can be easier to digest and less problematic for those sensitive to lactose; it supports bone health and helps supplement the diet with valuable fats and trace elements. In the kitchen, it works well as a spread for bread, an addition to salads, a filling for tarts and pancakes, and pairs nicely with honey, fruits, nuts, as well as herbs and olive oil. Store in the refrigerator in an airtight container or wrapped in parchment, and use within about 7–14 days; before serving, take it out for a few minutes to allow it to develop its aroma.
