Description

Gorgonzola piccante is an Italian blue cheese with a bold, spicy flavor and aroma, featuring an intense blue-green vein of mold in a creamy-yellow, crumbly-cream texture. The rind is thin and delicate, and the paste may crumble when mature, releasing a spicy, slightly nutty aftertaste with a sharp note. Nutritionally, gorgonzola provides protein, calcium, B vitamins, and vitamin A, as well as energy from fat; it also contains sodium, so it should be consumed in moderation. Natural mold cultures may support a diverse microbiome, but individuals with lactose intolerance or excess salt should exercise caution.
