Description

Canned corn has a sweet, delicate flavor and firm, bright yellow kernels with a shiny surface that retain their structure thanks to blanching before canning. Versions in brine may have a higher sodium content, so it's advisable to rinse the kernels before use. An unopened can stored in a cool, dry place will maintain its quality for a long time; once opened, transfer the corn to an airtight container and keep it in the refrigerator, ideally using it within 3–4 days or freezing it for longer storage.
