Description
Beluga lentils (black) are small, shiny grains resembling caviar, with an intensely black color, firm, slightly crunchy texture when cooked, and a subtly nutty-peppery, earthy flavor. They are rich in plant protein and fiber, providing iron, folic acid, magnesium, and B vitamins, with low fat content and a low glycemic index, which promotes satiety, stabilizes blood sugar levels, and supports heart and digestive health. In the kitchen, beluga lentils work well in salads, warm compositions with vegetables and herbs, as a base for warm bowls, in soups and stews, and as an ingredient in vegan patties or fillings. They are best stored dry in an airtight, cool, and dark place; cooked lentils can be kept in the refrigerator for 3–4 days or frozen for about 3 months.
