Citric acid is a white, crystalline powder with a distinctly sour, fresh taste reminiscent of lemon juice; in its natural form, it occurs in citrus fruits, but it is widely available as an industrial food additive. It does not provide significant calories or macronutrients, is not a vitamin, but it influences the taste and acidity of dishes, can improve the absorption of certain minerals through chelation, and exhibits preservative properties by lowering pH. In the kitchen, it is used to regulate acidity and enhance flavor in beverages, jams, marinades, fruit preserves, sweets, and cheeses, as well as a substitute for lemon juice where additional moisture is not desired.
