Description
Corn flour has a creamy-yellow to golden color and a texture ranging from finely ground to coarser meal; its flavor is mildly sweet and nutty with a distinct corn aroma. It is primarily a source of carbohydrates with moderate amounts of protein and fiber, is gluten-free, provides B vitamins, folates, and minerals such as magnesium and phosphorus, as well as antioxidants lutein and zeaxanthin, which support eye health and the digestive system. In the kitchen, corn flour is suitable for polenta, tortillas, cornbread, breading, thickening soups and sauces, and as an addition to cakes and pancakes, giving a characteristic texture and flavor.
