Description
Wheat flour type 450 (cake flour) is a finely ground, very light product with a mild, neutral flavor and a delicate, almost silky texture. It has a low protein content (about 7–9%) and a small amount of fiber, primarily providing carbohydrates and trace amounts of protein, B vitamins, and minerals; the low gluten content makes it easier to achieve a light texture, but it is not suitable for people with celiac disease. Cake flour works great in sponge cakes, layer cakes, cookies, delicate pastries, and for thickening sauces where a subtle structure is desired. Store in an airtight container, in a dry and cool place away from strong odors; at room temperature, it stays fresh for several months, and in the refrigerator or freezer, it can be stored longer.
