Rice noodles
Description
Rice noodles have a delicate, subtly sweet flavor and a smooth, soft texture when cooked; they come in the form of thin strands, ribbons, or flat sheets, becoming translucent and slightly glossy. Their neutral flavor profile absorbs the aromas of sauces and spices well, making them suitable for both light soups and intense stir-fry dishes or cold salads. Nutritionally, rice noodles are primarily carbohydrates with moderate calorie content, usually low in fat and protein, and when made from pure starchy rice — naturally gluten-free, easy to digest, and suitable for those with gluten intolerance. They are best combined with vegetables, a source of protein, and healthy fats to complement the missing micronutrients. Store dry in an airtight, dry, and cool place; cooked noodles can be kept in the refrigerator for 3–4 days in a closed container, reheating with a little water or oil, avoiding long freezing which worsens the texture.
