Baking margarine
Description
Baking margarine is a smooth, creamy fat with a light orange or cream color and a mild, neutral taste with a subtle buttery-oily note, designed to work well with sugar and flour. Typically based on vegetable oils, it primarily contains unsaturated fats, and many products are enriched with vitamins A and D; however, it is advisable to check labels for saturated fat content and any trans fats. Overall, baking margarine offers a lower saturated fat content than butter and good stability at high temperatures. In the kitchen, it works great in cookies, shortcrust pastry, crumbles, creams, and sponge cake, where it provides a delicate texture and even baking. Before use, it is worth tempering it to room temperature for whipping, and for sheets and layered baked goods, special baking margarines should be chosen. Store in a dry, cool place before opening; after opening, keep in the refrigerator in an airtight container and use within 4–6 weeks.
