Plant-based milk
Description
Plant-based milk is a creamy, usually whitish or slightly ecru drink, with a flavor that depends on the raw material — oat milk is mild and slightly sweet, soy milk is neutral and "full," almond milk has a delicate nutty taste, and coconut milk is intensely tropical. The consistency can be thin or thicker, sometimes with a natural sediment that is worth mixing before use. Nutritionally, plant-based milks typically have less saturated fat and zero cholesterol and lactose; the protein and calorie content varies between types (soy milk is richer in protein, oat milk contains fiber). Many products are fortified with calcium, vitamin D, and B12, making them a good alternative for those on a plant-based diet. They work well in coffee, smoothies, cereals, sauces, baking, and Asian dishes — soy and oat milks are thermally stable, while coconut milk adds character to curries. Once opened, store in the refrigerator, shake before use, and consume within 5–7 days; unopened UHT products should be kept in a cool, dry place.
