Description
Type C potatoes, starchy, have a dry, grainy texture and a light, creamy interior; their flavor is mild, slightly earthy, and they absorb spices and fats well. After cooking, they become fluffy and fall apart. This makes them ideal for purée, dumplings, gnocchi, baking in their skins, frying for fries, or casseroles; however, they are not suitable for salads as they easily break apart. Nutritionally, they are dominated by starchy carbohydrates, have a moderate amount of fiber, vitamin C and B6, and potassium, with low fat content and relatively small amounts of protein. When consumed in moderation, they provide energy and support muscle function due to potassium, and when cooled, they increase the content of resistant starch beneficial for gut microbiota. Store them in a dark, cool, and ventilated place (around 4–10°C), away from light and onions, avoiding the refrigerator and moisture to prevent sprouting and greening.
